The contents of the iLok key can be seen with the iLok license manager. It may be different with other versions of Ivory.) By default, the location is a subfolder called audio in the project folder. Not got cubase in front of me right now, but somewhere you'll find it under file menu IIRC, export, audio mixdown, that opens a new dialogue window where you specify the filename and export folder.

Although in a round about way you could get there using that feature too via a midi track with making an audio track from your midi track. It's not active because it is not an audio track, but a midi track so there is nothing to bounce ( I suspect that's the reason it is inactive, that would make sense ) that feature you would use in different situations when dealing with audio tracks.
